Pomegranate Mojito Mocktail Recipe



The days are getting hotter over here in our neck of the woods. We do get rains from time to time as being a tropical country Malaysia, it always rains here. There are two season only here, rainy and summer and each has its own beauty. Summer means we need to keep re-hydrating with drinking plenty of fluids and having light meals as well. When I last went to our local vegetable market, I saw pomegranate, so couldn’t stop myself from picking some for our daily usage. However, I soon realized they are little sour. But I needed to use them anyhow. 


This mojito mocktail recipe comes handy in this case, it’s such a refreshing non-alcoholic drink on a hot summer evening. I really like to unwind myself with a glass of cool pomegranate mojito and a book with me or catch up with dear daughter when she comes back from her school in the evening.
Now to the recipe
Pomegranate Mojito Mocktail Recipe
Recipe requirements ( serve-1)
  • 1 fresh Pomegranate
  • 2 tbs of fresh lemon juice
  • 2-3 tsp of sugar or honey as sweetener
  • About half a can of Sprite or 150 ml roughly
  • 2 tsp of freshly grated ginger




Method
  • Cut pomegranate into half. With the help of hand juicer, squeeze out fresh pomegranate juice.
  • Squeeze out excess juice from seeds. Discard seeds.
  • Now in a mixer, blend lemon and pomegranate juice, sugar and lemon juice well.
  • Add in freshly grated ginger into the mixture.
  • Put this mixture for refrigeration about 2-3 hrs. It will be nice if you can do this overnight.
  • At the time of serving, fill in the serving glass with ice cubes as desired.
  • Pour this pomegranate juice mix in to serving glasses.
  • Now pour Sprite slowly from one side of the glass and give 1-2 stir with a stirrer. Serve immediately.
  • This recipe is for 1 glass or 1 serving only. Increase the quantities for 4-5 people as required.
  • Serve chilled. You can spike it with rum in place of sprite.This is the virgin Mojito version with out any alcohol.

Melon Colada Mocktail Recipe


Our vegetable and fruit market is being flooded with fully ripened melons and cantaloupes these days. I often buy them fresh and we relish juicy melons a lot. Since Malaysia is a tropical country, these fruits are readily available. 



This mocktail recipe was made and relished very much. Mocktails are well, mock, that is minus alcohol. This is such a refreshing mocktail drink for a hot summer evening. Although, you can add alcohol of your choice to spike it and call it cocktail. 


You can use shaker with ice to make this mocktail. I have blended all in a mixer, which is what I have.
As a thumb rule in Pina colada, white rum is added but you can choose any other liquor as well. I have included papaya as well to make it healthy and filling. This is a kid-friendly recipe.


Melon Colada Mocktail Drink Recipe
Recipe requirements (serves-1)
  • 2-3 slices of fully ripened Sunlady melon or cantaloupes
  • 1 thin slice of fresh papaya
  • 12 tsp of fresh coconut milk
  •  3 oz. of sprite
  •  ½ tsp of honey as sweetener
  • Ice cubes and mint leaves for garnishing


Method
  • Pick fully ripened and fresh melon and papaya for better flavour. Use freshly made coconut milk for best flavour, otherwise you can use canned one or coconut cream in place of coconut milk.
  • Cut and chop melon and papaya into slices. Pick 2-3 slices or wedges from melon and 1 wedge from papaya. Make a mixture with honey and coconut milk in a blender. Now cool it in fridge. At the time of serving take out and mix it with sprite again in mixer. Sprite itself is sugary, so less honey is added. More over the fully ripened melon and papaya gives a nice sweet flavour. Serve chilled with mint leaves.
  • Easy and delicious papaya melon colada is ready. You can spike it with alcohol of your choice (rum/vodka/tequila) if you want a nice cocktail.

Apple Pear Oats Smoothie



Well it’s almost weekend friends.Weekend seems to come and go like jiffy. Last time on weekend, when we were out in a park, our dear daughter asked us to hand over our point and shoot camera to her. She is one chirpy girl who always is fascinated by nature and loves to spend time around the activities of park.She is a nature girl for sure.Give her a choice of picking study book or stroll around in a park, she would always pick the latter option happily.

 I had just set the camera in different modes our point and shoot camera has. And I was amazed when we downloaded the pictures. Some of them left me in awe.

DD- Row of trees, Now how should I get the zoom shot, Pa could you please tell me ?

Pa- Ask Ma, she is the one using this camera most of the time for her food blog.I cant remember when was the last time I got hold of it.

DD- Yeah, I know tat, but I want the pictures of Ladybugs....

Now to the recipe
This smoothie recipe is a request from my daughter, who loves yogurt drinks. So, when we were doing our weekly grocery shopping together, she told me to buy yogurt drink. I told her we can make this in home. But then after coming to home, I forgot about it. However, somehow the idea kept going inside her mind, she didn’t forget. The other morning she came to me and reminded about her yogurt drink. So, here is what I added in her smoothie. I had apples, pears and oats granola and also some walnuts. Her yogurt drink or smoothie was ready in minutes. I would say sometimes recipes just come to your mind in jiffy as well.Isn’t?




Apple Pear Oat Smoothie
1 apple
3-4 tbs of  Oats Granola
1 pear
½ cup of plain yogurt (onken)
Some walnut chunks
¼ cup of double cream
Sugar as per taste
Method


Peel the outer skin of apple and pear. Slice them into pieces.
Pulse through all yogurt, cream, fruits, oat granola and toasted walnuts in a grinder/mixer. Add in sugar.
Add cream and pulse through for 1 mint. Check for the sweetness.
Serve and enjoy.
If you wish to make it light then add water and replace double cream with condensed milk.
Or you may add honey in place of sugar.

And up close and personal, stock your food before the winter hits hard.

I was being tagged by Sra for this Bookish Meme , I don’t read much , as if I don’t wish to , But with my little one , My life is a roller coaster Ride .
Last time I read Japanese wife and that was some two-three months ago , now I just picked this book by a comparatively new writer, her first book but surprisingly very fresh and witty.

Fruit Punch
1 Pomegranate
1 sweet lime
½ tsp of salt
½ tsp of black pepper powder
1 tsp of sugar or Honey
Method
Take out juices from the fruits , add salt, sugar and black pepper powder and cumin powder .Chill or drink fresh .
This fruit punch is good for toddlers as it gets a refreshing effect and provides nourishment .

Tea and My comfort zone

Tea or Camillia sinensis is considered to be a refreshing drink.
The degree of processing the leaves determines the quality of tea.
Green tea is less processed. Black and red tea is partially crushed; dried and fermented .The length of fermentation determines the color on leaves will be black or red.
Tea has cancer fighting properties, as it has polyphenols which acts as antioxidants.

While I start my day with a cup of tea in early morning, I feel rejuvenated and ready to take on my life.
Ginger tea is another tea with medicinal value which we like to drink .This tea gives an instant relief to cold and cough. Sprinkle some black pepper powder when ready to drink, soothes the throat and clears the mucous also.
Ginger tea
Serves for 1 people
1 tsp of tea (while we use mixed, some green leaves and black)
½ tsp of ginger paste (use fresh ginger instead of processed)
¼ cup of hot milk
¾ cup of water
½ tsp of sugar
Method
Boil the milk first, keep aside, meanwhile in a separate vessel heat up ginger paste and water, add sugar and tea, stop the flame take out in another vessel and cover it.
Now Filter the tea and add hot milk to it .

Tropical Smoothie and Coconut Ladoo


Tropical Smoothie
Fresh Coconut water 2 cups
Pineapple Juice 2 cups
1 Mango slice
Fresh grated Coconut meat ½ cups
Yogurt 1 cup
2 tbs of sugar

Method
Grate coconut meat, or blend it in mixer.
Now put all the ingredients in mixer and blend well .Refrigerate for 2 hrs before you serve.
Coconut water is good for tropical climate and adds the advantage of Yogurt; this drink gives a cooling effect in hot humid weather.

Coconut Ladoo

Fresh coconut meat grated 2 cups
½ cup of sugar
3 tbs of Besan or chick pea flour
2 tbs of milk
4-5 tbs of ghee

Method
Heat up ghee , now add coconut and sugar and cook at low for 10 -15 mints stiring continuously .Make sure the Batter doesn’t stick to base .
When it starts to collect and comes out smoothly from the side of Kadai , this is ready .
Now add milk and besan and mix well , add this mixture to the coconut and cook at low for 5 mints till the milk mixture gets dried .
Take out in a separate plate and quickly start to roll them into small balls like ladoo .Coconut Laddo is ready .
This is very similar to Narkoler Naru except that Narkoler Naro is made with Gur and coconut only .

Sweet Lime Shorbet

Serves one glass
3 fresh green sweet lime
1tsp of sugar
½ tsp of salt
½ tsp of cumin powder
Get the juice of limes in juicer and then mix in salt , sugar , cumin powder and enjoy this great summer drink.

Mango Lassi

We remember drinking mango lassi during summer time a lot .This was and is one of our favorite drinks .We would eagerly wait for summers to have our favorite mangoes and mango lassi .However this winter when I was craving for mango lassi ,I got mango Nector in a tetra pack from our local grocery shop and here it is mango lassi made in the easiest way possible .My little daughter shares the same passion for it like me.






Mango lassi
1cup Fresh curd/yogurt
2-3 tbs or ¼ cup of Tropicana Mango Nector
1tbs of Sugar
Pinch of salt
Some ice-cubes 1-2 (optional)
Method
Mix in all in a blender at a low speed ,take out in serving glasses chill it and enjoy .





As I was about to take this snap, suddenly there appears her hand in my camera frame,before I could realize the snap was taken effortlessly in seconds ,I must tell you it wasn’t preplanned, but it just happened in a zap of seconds. She gave me a mischievous smile while sipping mango lassi( as if telling me “you take snaps later ,first let me taste it” ) and I kept laughing later on .Quite right and point taken you cook things to eat and drink .......
