Festive Greetings with Chicken Parcel Recipe and Choco Chip Cookies

 We are facing a very challenging pandemic year so far and each of us have their versions of challenges. However, festivals bring hope and happiness and we start anticipating nice things in progress, forgetting about the obstacles and challenges of a pandemic year.

I have made these Chicken parcels and dear daughter has made Choco chip cookies on Christmas eve yesterday, so likewise it has featured in the blog. These chicken parcels are easy to assemble with ready-made short crust pastry dough. These parcels reminded me of Cornish pasties, although not entirely similar but has uncanny resemblance, perhaps a little shape is lacking here and there. The crescent shape Pasty was replaced with a rectangular chicken parcel. I have avoided doing egg wash for each parcel. But next time will do that for a nice even shinny and crusty layer.

Now to the recipe

Chicken Parcel

Recipe requirements

  • Short crust pastry block- 500gms
  • 400-500 gms of chicken thigh portions
  • 1 medium size potato
  • 1 medium size onion
  • 1 cup of green peas
  • 100 Gms of baby chestnut mushrooms
  • 1 medium size tomato
  • 3-4 heaped tbs of chicken gravy granules
  • 1 tsp of black pepper powder
  • 3-4 tbs of cooking oil
  • 1 tsp of salt



Method

  • Clean and cut chicken thigh portions into bit size portions. Chop potato, tomato and onion. Cut potato into small bite size portions.
  • Now put a fry pan on medium heat. Add cooking oil, add in onions, baby chestnut mushrooms, green peas and cut tomatoes. Add in potato and chicken pieces as well.
  • Add in chicken gravy granules and salt. Add in black pepper powder. Add in a cup of water. Cover and cook for about 15-20 mints or till chicken turn out soft and the content starts collecting well somewhat more like semi-dry.

Now to the pastry

  • Take out pastry dough from the packet and divide it into 4 portions. Roll into a long rectangular slab. Please follow package direction for thawing and rolling the dough.
  • Divide the cooked chicken and potato mixture into 4 portions.
  • Place the mixture at one side and roll over from other side. Press with fork and seal the ends. (At this time, you can even do an egg wash for each parcel)
  • Preheat an oven at 180 deg C.
  • Put the parcels over baking tray and bake 25-30 mints depending on the make of oven. Take out once the sides of parcel start to brown out. The sides of the parcel should nicely toast and center should remain little bit soft but cooked well.
  • Serve warm and enjoy. Vegetarians can make it with soya chunks or Paneer pieces.

These Choco Chip Cookies were made by dear daughter and these turned out very delicious.



Choco Chip Cookies

Recipe requirements

Recipe adapted from (Here)

  • 125 gms of softened butter
  • 100 gms granulated sugar
  • 100 gms light brown sugar
  • 1 egg
  • 1 and ¾ cup of self-rising flour
  • 1 tsp of vanilla essence
  • ½ tsp of salt
  • 100 gms of chocolate chips

Method

  • Cream softened butter and granulated sugar, light brown sugar in a big mixing bowl.
  • Now add egg and vanilla essence and mix well.
  • Sift in self raising flour and salt. Keep mixing this flour mixture with creamed butter and sugar till all the dough starts to collect well. Dust off more flour if it gets sticky.
  • Put the dough to rest in fridge for about 2-3 hrs. Take out when you are ready to make Choco chip cookies.
  • Preheat an oven at 180 deg C. Line up a baking tray with grease proof paper or baking paper sheet.
  • Now make walnut size small balls out of the dough and roll them nicely rounded. Put them apart on baking tray. Sprinkle some chocolate chips over and gently press to secure them on cookies dough.
  • Bake in the oven for about 10-15 mints or the make of your oven.
  • Take out once sides are just starting to go light brown in color. Delicious Choco chip cookies are ready. Enjoy. This dough can be put in deep fridge and it will stay fresh for about a month, Use it accordingly.

Turkey Meatballs and Mushroom Rice Pilaf- Kofte and Mushroom Pulao

 We have been witnessing obnoxious level of summer heat in UK, with past couple of days being extremely hot. This reminded me of Indian summer and the only respite, I can think of is torrential rain showers. The rumbling clouds came hovering on few evenings and played their part in bringing down the temperature momentarily, only to disappoint us again with rising temperature next day. Wednesday being one of the hottest day of this summer season. The scorching heat has made everyone feel the heat, even the trees, birds and bees are not spared.

This is another effect of climate change and we need to adjust with it along with Covid. This virus has made us all chaotic and going restless, claiming victims with immense suffering and with economy taking a plunging fall across globe.Among all these, there is a place where we may find some solace, to each to their own. Please keep doing those things which brings mental diversion from negativity happening around us.In this pandemic era, we need to hold on to our patience level and act with caution. Keep safe and follow local guidelines where ever you are placed in the world. 

Yesterday evening, it was a welcome change with heavy rainfall leaving a pleasant relief from humidity and scorching heat.” Sawan” or monsoon is a special season in India, rain itself evokes so many emotions. Food and poetry have been integral part of Monsoon season in India. 

I just happened to listen to these “Thumri”- Jamuna Kinare Mora Gaon and "Kajri" Sawan Ki Ritu to replicate the same ambiance from back home. The pitter-patter of raindrops on window panes amidst rumbling clouds and these heart wrenching Thumri Gayaki enthralled the night for me. After this soul music, it is now time for some soul food as well.


 Now let’s talk about the recipe

I have made these turkey meatballs a fortnight ago. These meatballs are regular in our food menu. We make spaghetti with meatballs with them often. I have used them to make Kofte curry as well. So, you can guess its versatile nature and its very adaptive. You can even stuff them in Pita and serve with hummus as well.

I have made kofte and mushroom pulao this time. I sometimes add whatever vegetables I have in my pantry to make pulao even more filling and nutritious.These meatballs freeze well. You can make big batches and freeze them in freezer. These stays fresh for about a month. I won’t recommend using them after a month as its home-made with no preservatives. There are many other possibilities with these turkey meatballs.

I have used Turkey mince, but you can replace it with other red meat mince. 

Now to the recipe

Baked Meatball and Mushroom Rice Pilaf- Kofte and mushroom Pulao

For Meatballs/Kofte (Baked)

Recipe requirements (Makes 18-20)

 Turkey mince – 750 gms

2-3 tsp of tandoori masala

1 tsp of coriander powder

2 tsp of red pepper powder

2 tsp of freshly crushed whole black pepper

1 tsp of garam masala

1 tsp of salt

2-3 tsp of fresh lemon juice

¼ cup of Besan/ Bengal gram flour

2-3 tsp of cooking oil

Method

Take out turkey mince from the packet in a big mixing bowl. Clean it with running water, but do not break the mince slab while cleaning. It will be nice if you can squeeze out excess water from it once you have cleaned the mince. Pat dry with kitchen towel to soak up extra moisture.

Add in tandoori masala, coriander powder, red pepper powder, garam masala, and freshly crushed black pepper and salt as per taste.

Add in lemon juice to the mince. Add in besan and cooking oil.

Now with clean hands, mix all very well. Keep on kneading just like you would do for making atta dough. When it starts to collect well and no sticky, the mixture is ready. If required, you may add some more oil.

Cover the mince mixture and refrigerate for 2-3 hours.

Preheat an oven at 175 deg C.

Line up a baking tray with foil.

Divide the mixture into equal parts. I ended up making about 18-19 turkey mince balls out of it.

Bake in for about 25-30 mints. Take out and let it cool.

This will be added later into Pulao.

It can be refrigerated also for future use.


 Pulao - Rice Pilaf

Recipe requirements (serves 2-3)

1 large cup of long grain Basmati rice

2 cups of chopped mushroom

3-4 tsp of biryani masala – refer this recipe

1 tsp of red pepper powder

4 tsp of rose water

3-4 tsp of ghee

 3-4 tsp of cooking oil

2 tsp of grated ginger and garlic paste

1 large onion finely chopped

3-4 green cardamom

2-3 black cardamom

 ½ inch cinnamon

2 tsp of whole black pepper

1 tsp of salt

Method

In a big pot, cook rice with ample water till they are ¾ done. Just like al Dente as in pasta. Drain the starch. Add in ghee and 2 tsp of biryani masala powder and slowly fluff with a spoon.

Now in a big wok or a pot, add in cooking oil. Temper the oil with freshly crushed cardamom, cinnamon and whole black pepper.

Add in grated ginger and garlic and finely chopped onions. Fry them well for about 4-5 mints, till a nice aroma hits your nose.

Add in dry spice powders- rest of biryani masala, red pepper and salt. Mix well. Sprinkle bit of water.

Now add in baked meatballs and chopped mushrooms and coat with spices well.

Now add in cooked rice in that pot, mixing slowly, making sure Kofte don’t break out.

Sprinkle rose water all over it.

Cover the pan and cook at low flame (at Dum) for about 8-10 mints.

Take it off and let the rice pilaf/pulao sit in for about 1-2 hrs.

Serve with boiled egg and raita. Enjoy.

Chicken Curry



Its December and we are very near to roll up another year. The last leaf bid adieu to gorgeous autumn, bare and naked trees slowly embracing cold winter season. Each cycle of season changes, invokes myriad feelings. 


All shops and market places are decked up and looks absolutely festive and colorful these days. 

We have put up a Christmas tree just like every year. And it has lighted up our home with joy and contentment. Festivals revive our bonding with friends and family also. Live, Laugh and Love 💟😊


So, enjoy festivity and take time offs. We have another week of schooling and then we will be having Christmas holidays. Holidays makes me busy, yes you read it right. We have to plan to fill in our days with some activities or even a movie day out. We are looking forward to Star-Wars movie this December, let’s hope it doesn’t turn out to be a let-down for us.






Zara hat key! This is what my daughter told me when she did her tasting for this chicken curry recipe. Although she can’t pinpoint exact spices that went into making this chicken curry, but she liked the final product. Meanwhile, I was trying to figure out, how should I name this recipe but nothing came to my mind. 

Without adding up any further mysteries, I thought let me just put it as ‘Zara hat key’. We liked this as a leisurely paced Sunday lunch with warm paneer pulao/pilaf as accompaniment. This is from our kitchen to your world, presenting Zara hat key chicken curry.




Chicken Curry- Zara Hat Key
Recipe requirements
  • Chicken – 1kg
  • 4 medium size onions
  • 4-5 garlic cloves
  • ½ inch ginger
  • 3-4 dry red pepper
  • 1 medium size tomato
  • 2-3 medium size potato cut into half

Seasonings
  • ½ tsp of red pepper powder
  • 1 tsp of Kashmiri red pepper powder
  • 2 tsp of coriander powder
  •  ½ tsp of cumin powder
  • ¼ tsp of carom seeds
  • 3-4 cloves
  • 2-3 green cardamom
  • 1 tsp of whole black pepper
  • 1 tsp of Salt or as per taste
  • 2-3 tsp of ghee
  • ¼ cup of cooking oil

Method
  • Wash and clean chicken pieces thoroughly. I have used chicken drumstick portions for this curry.
  • In a food processor or mixer/grinder, grind onions, garlic, ginger, tomato and dry red pepper in to a smooth paste. It would be better if you soak dry red peppers in warm water for about 1 hr or till they swell and become soft.
  • Now heat up a heavy bottomed fry pan, add cooking oil.
  • Add in the prepared paste, add in salt, turmeric powder, red pepper powder, Kashmiri red pepper powder, cumin powder and coriander powder and keep on stir/fry for 10-15 mints at medium high flame.
  • Meanwhile in a mortar/pestle, dry grind- carom seeds, cloves, cardamom, whole black pepper.
  • Now add in cut potatoes to the above fried masala paste. Add the dry masala powder that you have prepared earlier in mortar and pestle now.
  • Keep on stir/frying for about 8-10 mints more. Add in 2 cups of water. Preferably warm water.
  •  Now cover the pan and let it cook. Lower the flame and let it slowly cook in its own juices and all spices for about 30 -35 mints or till all the chicken pieces turns soft and cooked through well.
  • At the end add in ghee and mix well.

Chicken Dry Curry- Murgir Makha-Makha Jhaal

Past couple of days, its raining here, sometimes persistent and sometimes intermittent. We are observing sudden drop in temperatures in the mornings and evenings. If it rains the weather becomes cold and soggy which is typical of autumn season in this part of the world. 


Although, fall season has an enticing aura and grandeur. Each and every falling leaf has a beauty of its own. I was strolling out, in one of our local parks and tried to capture some moments with my mobile.



And also, this blog has turned 13. Thirteen long years have passed, when I first wrote a random blogpost in blogger in 2006.It feels nice to be connected to my readers, who have subscribed the blog posts and feeds.
Although, I am not that active in using other social media platforms, this blog still has some loyal readers. I must thank them and new readers for coming back here for recipes and more for years now.

Now to the recipe for todays post- chicken curry. I would not want to label this as curry. But I fail to come up with exact replica for ‘makha-makha jhal’ in English. I have taken some liberty in naming this dish chicken dry curry. I have used ajwain/carom seeds for making this dry curry, although it’s not the only ingredient, which I would like to highlight.
Although must admit ajwain/carom seeds being a digestive enhancer helps in balancing off the richness of the gravy that comes with walnuts and all whole garam masala ingredients.
The use of freshly grounded spices like mace, cloves and cardamom has infused much aroma to the gravy. The gravy was done in slow stir/fry type.
This is a work of patience, as you need to pound and grind the spices for a lovely aroma, which adds up to the gravy. I took the pictures with my mobile as usual. Hope, it justifies the texture of the gravy.

Now to the recipe.


Chicken Dry Curry- Murgir Makha-Makha Jhaal
Recipe requirements
  • Chicken – 1kg
  • 4 medium size onions
  • 4-5 garlic cloves
  • ½ inch ginger
  • 3-4 green chillies
  • 1 medium size tomato
  • 2-3 medium size potato cut into half
  • 5-6 walnuts
  • ¼ cup of raisins

Seasonings
  • 1 tsp of red pepper powder
  • 2 tsp of coriander powder
  • salt as per taste or 1 tsp 
  • 5-6 tbs of cooking oil 


To be freshly grounded
  • 2 tsp of whole black pepper
  • 4-5 cloves
  • 4-5 green cardamom
  • Few strands of mace
  • ¼ tsp of carom seeds
Method
  • Wash and clean chicken pieces thoroughly. I have used 4 leg-sides portions for this curry which makes approx 1 kg of chicken.
  • In a food processor or mixer/grinder, grind onions, garlic, ginger, walnuts, raisins, tomato and green chillies to a smooth paste.
  • Now heat up a heavy bottomed fry pan, add cooking oil.
  • Add in the prepared paste, add in salt, turmeric powder, red pepper powder and coriander powder and keep on stir/fry for 10-15 mints.
  • Meanwhile in a mortar/pestle, dry grind- carom seeds, cloves, cardamom, whole black pepper and mace.
  • Now add in cut potatoes to the above. Add the dry grinded masala powder now.
  • Keep on stir/frying for about 5-7 mints more. 
  • Now cover the pan and let it cook. Do not add water, if you want a dry gravy with it. Lower the flame and let it slowly cook in its own juices and all spices for about 30 -35 mints or till all the chicken pieces turns soft and cooked through well.

Chicken Cutlets


Autumn invokes warmth and the familiarity associated with festivity. With harvest festival Halloween end of this month in western hemisphere and in other part of the hemisphere Navaratri and Deepawali in tows, autumn season has become even more happening and beautiful.


Next four days are very busy for every Bengali as its Durga Pujo.
Let me wish everyone Shubh Navaratri and Happy Durga Pujo. Enjoy and celebrate with good food in good company.
These chicken cutlets have turned out delicious and you can try out making them. These are great as starters and makes great accompaniment with Pulao and Korma.

Chicken Cutlets

Recipe Requirements
  • Roasted chicken- ( recipe link )300 gms
  • 1 big purple onion
  • 5-6 green chillies
  • 1/2 cup of finely chopped coriander leaves
  • Spices and seasoning
  • 2 tsp of coriander powder
  • 1 tsp of cumin powder
  •  1 tsp of garam masala
  • ½ tsp of cinnamon powder
  •  2 tsp of red pepper powder
  • 2 tsp of freshly grounded black pepper
  • ½ tsp of ajwain (carom) seeds
  • 1 tsp of salt or as per taste
  •  2-3 tbs of cooking oil for pan frying
Method
  • Chop onion, garlic and green chillies.
  • Take roasted chicken in a bowl. Add all of the chopped onions, garlic and green chillies into it.
  • Add salt, red pepper powder, coriander powder, garam masala and freshly grounded black pepper, cinnamon powder and cumin powder. Add in finely chopped coriander leaves.Mix them well with hands.
  • Refrigerate the mixture for about an hour so that the mixture gets firmer and it will be easy to shape up patties. Divide the mixture into 5-6 portions and shape them like patties.
  • Put a non-stick tava/skillet on flame at medium flame.
  • Drop about a tsp of oil. Tava fry them for about 3-4 mints at medium flame have a nice dark brown crust.
  • Take out and serve.

Roasted Chicken with Rosemary



Usually on Sundays, we sometimes do chicken roast. This recipe is very simple to assemble. I have personally liked rosemary herb for its unique smell and its addition, brings a nice twist to our mundane Sunday roast. I have also roasted some asparagus, potatoes, an onion and garlic as sides with it.




Now to the recipe
Roasted Chicken with Rosemary
Recipe requirements
1 medium size whole chicken
For the marination
2 tsp of red pepper powder
2 tsp of coriander powder
1 tsp of garam masala powder
3-4 stems rosemary
2 tbs of cooking oil
Salt as per taste



Method
  • Wash the chicken well in lukewarm water.
  • Now make the marinating powder
  • Mix in coriander+red pepper +garam masala powder +salt as per taste.
  • Now generously rub it all over the chicken and also to inside of chicken.
  • Keep refrigerated for about 1-2 hrs for marination. This way chicken absorbs the flavour most and turns out tenderer.
  • Preheat oven at 180 deg Celsius.
  • Line a roasting tray with foil (if available) and then place the chicken over it.Arrange rosemary herb twigs nicely over it and also inside the chicken.
  • Place in the second shelf of the oven.
  • Bake it for 1 hr without skin and if the chicken has skin, then add in 4-5 mints more.
  • Check for your make of oven and check about proper temperature for roasting. Half way through, take out chicken and bast/brush it with some oil.
  • Roast chicken for about 1hr or till chicken is no longer pink and juices run clear.

Tava/Pan Fried Mutton Shami Kebab



I have been away for a while from active food blogging, as I had to tender and look into many personal matters and one of them being a relocation again. Now, I have lost the counts how many times I have relocated. But it feels like home coming to UK once again as per written analogy. Malaysia was a fabulous experience. Someday I want to go back again there, to relive our wonderful memories.


When we landed in UK, that same whiff of air hit me again, a sense of familiarity among unfamiliar faces engrossed into their smartphones. It took us for a while to get settled over here.
Let’s hope, I will try to update this space more often. With spring blossoms on full vigour and Holi festival coming up near, thought this will be a nice beginning for this space.
I had lamb mince and wanted to make some kebabs. This recipe was an impromptu attempt on my part and glad it turned out nice. I have used store bought spice mix just to enhance the flavour more. But if you genuinely want to make it from scratch, then I would suggest to grind all the spices in home. Otherwise in this busy world, I guess the store bought spice packets are very handy.These were like melt in mouths kebabs and also I have tried to use less oil to pan fry them.
Now to the recipe

Pan/Tava fried Mutton Shami Kebab
Recipe requirements
  • Lamb/Mutton mince/ keema- 400gms
  • Chana dal – 1 and ½ cup
  • 1 big purple onion
  • 3-4 big garlic cloves
  • 1 medium size tomato
  • 5-6 green chillies
  • Spices and seasoning
  • 3 tsp of coriander powder
  • 2 tsp of cumin powder
  •  2 tsp of garam masala
  • 3 tsp of tandoori masala
  • 1 tsp of cinnamon powder
  •  2-3 tsp of red pepper powder
  • 2-3 tsp of freshly grounded black pepper
  • 1 tsp of salt or as per taste
  •  2-3 tbs of cooking oil for pan frying


Method
  • Wash the lentils and put it in pressure cooker. Add about 1 cup of water. Let it simmer on high flame, skim out the froth form the lentils.
  • Now add in 400 Gms of lamb mince or mutton keema.Add in 1 cup of water.
  • Chop onion, garlic and tomatoes and add them with the dal and mince.
  • Add salt, red pepper powder, coriander powder, tandoori powder, and cumin powder. Check the water content, it should come up to the level of the mixture properly but shouldn’t be more than the content, otherwise the lentils will be soggy and that is what we don’t want.
  • Let it cook for 2 whistles. Lower the flame and let it simmer for 7-10 mints. Put off the flame and let the pressure subside. Open the lid and let it cool.
  • Take out the mince+ lentil mixture in a big mixing bowl. Squeeze out excess liquid with your hands.
  • Now add rest of the spices- cinnamon powder, garam masala and freshly grounded black pepper powder. Adjust salt and hotness if required with red pepper powder. Add in finely chopped green chillies. Knead and mix the mixture very well.
  • Refrigerate the mixture for about an hour so that the mixture gets firmer and it will be easy to shape up patties.
  • Put a non-stick tava/skillet on flame at medium flame.
  • Drop about a tsp of oil .Take out the lamb mince mixture and shape them into patties. This much mixture, I end up making about 17-18 shami kababs.
  • Tava fry them for about 3-4 mints at medium flame or they turn and have a nice dark brown crust.
  • Take out and serve.

Ikan Tongkol/Tongol Tuna Fish curry



I have recently tried Tongkol fish here in Malaysia. This fish reminds me of Tuna, actually the texture for this fish is very similar to Tuna, as both the fish belongs to the same group. The size is small as compared to big Tuna. This fish curry turned out very flavourful and fresh fish tastes way better than those canned tuna that we get in most of Western countries, plus point is, this fish has lower or no mercury contamination as compared to the larger tuna chunks.


Any tuna recipe can be very well replaced by Tongkol. So, the steamed Tongol pieces can be made into delicious croquettes recipes and can also be used in as a filling in sandwiches or rolled up in a roti-wrap. These Togkol fish wraps can be made ahead and stored in fridge. You can replace chicken or other meat from many such recipes and include Tongol fish. The fish is firm and has a lovely texture.
Now to our usual way of making fish, Tongol Fish curry in a Bengali style with garlic and ginger and some spices.
Ikan Tongkol/Tongkol Tuna Fish Curry
Recipe requirements
  •  Tongol Tuna Fish – 3-4 medium size fish cut into three pieces
  • ¼ inch ginger root
  • 2-3 garlic
  • 1 large tomato
  • 1 cup of coriander leaves

For tempering and seasonings
  • 2 tsp of turmeric powder
  • 1 and ½ tsp of red pepper powder
  •  1 tsp of coriander powder
  • ½ tsp of cardamom powder
  • ½ tsp of cinnamon powder
  • 1 tsp of salt or as per taste
  • 3-4 green chillies
  • 1 tsp of cumin seeds
  • 6-7 tbs of mustard oil

Method
  • Marinate fish pieces in salt and turmeric powder.
  • Heat up a fry pan. Add 3-4 tbs of mustard oil, fry fish pieces for about 3-4 mints each side. Take out in a separate plate.
  • In that fry pan itself, add more mustard oil, add in cumin seeds, green chillies slit in between.
  • Add in grated ginger and garlic. Fry 1-2 mints at med-high flame or till a nice garlicky smell starts coming.
  • In a small bowl, add in turmeric powder, red pepper powder, coriander powder, cardamom powder, cinnamon powder and salt and give a nice mix with bit of water just to dissolve all the dry ingredients. This masala paste will be required now.
  • Add in chopped tomato now. Fry the tomatoes till oil separates out. Add in half cup of chopped coriander leaves and the masala paste. Keep on frying this masala paste for about 5-7 mints or till the masala gets little bit dry and oil separates out.
  • Now add in fried Tongol tuna fish pieces. Add in 2 cups of water and lower the flame. Let it cook for about 8-10 mints.
  • Add in chopped coriander leaves for garnishing and take out in a serving bowl.
  • Serve warm with rice.

Kibbeh - a Lebanese delight


We tasted kibbeh for the first time way back, many years ago, while we were staying in UK. Kibbeh as we know is a Lebanese delight. But these days you get all sorts of food in any part of the world.UK has fair share of Lebanese restaurants along with Indian restaurants as well. In Malaysia, food lover’s heaven, I haven’t explored middle-eastern restaurant here much, but I can’t rule out that possibility as well.


We really liked kibbeh, as it reminded us of our very own ‘Keema- meat mince cutlets’’. The only variation I can distinguish between both is the covering of kibbeh made with wheat bulgur and usage of pine nuts in the stuffing.
There are various versions of recipes available in net. This recipe has worked well for us. Here is how we made it.

Kibbeh Recipe
(Measurements are approx.)

  • 1 and half cups of cooked bulgur wheat (tightly pressed cups)
  • 400-500 Gms of lamb mince
  • 2 tsp of freshly grounded cumin
  • 1 tsp of coriander powder
  •  1 tsp of garam masala
  • 1 and half tsp of freshly grounded black pepper
  •  1 tsp of salt or as per taste
  • 1 large onion
  • ¼ cup of pine nuts (optional)
  • Cooking oil for frying kibbeh


Method
Soak bulgur wheat in water for about 30-40 mints, or till they are light and fluffy. It will fluff up and swell a lot.

Prepare the covering of kibbeh

  • Divide lamb mince into two portions- one for the covering part and one for the filing. I have used more for the covering roughly about 300 Gms. Finely chop onion.
  • Add in 1tsp of cumin powder, salt, ½ tsp of garam masala and black pepper powder and half of the onion in a big mixing bowl. Now blend all the spices and half of the onion well with bulgur wheat in a blender.Add in water if it sticks. Take out the mixture.
  • Mix in minced lamb with above prepared wheat bulgur with clean hands. This will turn out like soft dough. Keep it aside for about 1 hr. It’s better to refrigerate it. We need cold dough as it helps in shaping the kibbeh.


Prepare the stuffing of kibbeh

  • Now in a separate fry pan, add in 2 tsp of oil, add in half of the finely chopped onion. Add in 1 tsp of cumin powder, salt, and ½ tsp of garam masala and 1 tsp of freshly grounded black pepper. 
  • Add in pine nuts if using it, if you don’t get pine nuts then you can use chopped cashews/almonds/walnuts. But pine nuts are the original nuts used in kibbeh recipe.
  •  Add in rest of the minced meat at this time. Gently stir/fry the mixture for about 10-12 mints or till they turn pale.
  • Take out the kibbeh dough from fridge. Divide evenly in to small balls. This much makes about 6-7 kibbeh roughly. Put the small ball in your palm.
  •  Make a hole from one side, put the stuffing inside and then seal it with wet hands. Keep a bowl of water nearby it helps. Shape the kibbeh with gentle hands. This video will be helpful in knowing the technique of shaping the kibbeh.
  • Now put a deep bottom pan/fry pan on flame, add in cooking oil and let it heat up properly. Test by dropping some cumin seeds, if it sizzles and comes on the top, oil is ready for deep frying.
  • Now put kibbeh slowly into the hot oil, fry the kibbeh for about 7-8 mints at medium flame, turning them once in a while for an even fry. Take out when all the sides are evenly browned. Drain them on kitchen towels so that it soaks up extra oil.
  • Serve it with minty yogurt dip or have it with hummus.


Note

I happen to bake them even. Instead of frying kibbeh croquettes in oil. I brushed cooking oil over them well and baked at a preheated oven for about 15-20 mints.

Baked Cannelloni Pasta with chicken and cheese



What would I have to say about my vanishing act? You eager souls are wondering what can be the reasons. Oh this and that, then and when etc. …if I ever write my story …I mean ever... although doubtful, some chapters will definitely be on my vanishing act. Anyhow the exact reason is I was not keeping well. So, I didn’t feel like updating the blog. Although I did cook from time-to time, but updating the blog was not a priority at those terrible times. Anyhow slowly I am trying to figure out how to handle things. Hopefully will try to update this space more often. I can keep trying but I can’t promise.


I made this pasta recipe way back, but couldn’t post the recipe on time. This cannelloni pasta recipe was well received by my folks and also by my dear daughter’s school friends. I happen to pick this pasta while doing my grocery shopping and was intrigued. I found working with them little challenging as they tear out on a brink if extra pressure is applied. You have to work with gentle hands and be gentle with them like a true artist holds their paint-brush. Cooking this pasta is of course a piece of art. Anyhow I have used chicken and cheese stuffing for this recipe .Vegetarians don’t get disappointed, you can substitute it with spinach and ricotta cheese- absolutely delish material.

Here is how cannelloni pasta recipe we made

Baked Cannelloni pasta with chicken stuffing
Recipe requirements (serves 3-4 people)
  • 12 – Cannelloni pasta

For the Chicken stuffing
  • Roasted chicken 2 cups- thin and small bite size pieces
  •  1 large onion
  •  1 medium potato
  • 1 tomato
  •  2-3 tsp of dried Italian herb seasoning (can use dried sage and dried rosemary)
  •  3-5 heaped tbs of Pasta sauce

For Béchamel sauce
  • 3-4 tsp of butter
  • 2-3 cups of milk
  • 3-4 tbs of flour
  • White pepper powder
  • Quarter tsp of nutmeg powder
  • ½ cup of mozzarella cheese
  • some more to mozzarella to form the nice brown crust
  • 2 free range eggs
  • Salt as per taste



Method

For béchamel sauce
  •  Heat butter add in flour and stir mix. Add in milk and keep stirring .Add in eggs one by one and mozzarella cheese and keep mixing till it thickens. You can use Parmesan cheese in equal quantity as well like half mozzarella and half Parmesan cheese. This way it adds a nice texture and flavour to the sauce. Adjust salt as per taste. Add in white pepper powder and nutmeg powder.
  • Reserve some portions of this sauce to be used later on while baking cannelloni.
  • Now add in roasted chicken, finely chopped onion, potato and tomato to the above simmering béchamel sauce to make the stuffing . Add in dried Italian herb seasoning.Mix well and cook for 15 mints. This form a thick stuffing for cannelloni pasta….

Bake and Cooking of Pasta
  • Cook pasta al dente for 7-8 mints. Now quickly take out the pasta and let it dry a bit over a plate. Carefully lift the pasta and fill in the stuffing inside of the cannelloni pasta with the help of spoon.
  • Prepare a baking tray. Layer rest of the béchamel sauce first evenly at the bottom.
  • Now place stuffed cannelloni pasta to fill the space in baking tray. Put some pasta sauce over them.
  • Now again put stuffed cannelloni pasta one by one neatly over this layer. Spread some more béchamel sauce if you have any leftover or otherwise you may spread some pasta sauce as well.
  • Bake at 175 deg C for 10 mints...Take out sprinkle mozzarella cheese and bake further 10 mints or till the cheese evenly melted and a nice brown texture is formed.
  • Take out and serve.


Tips

You can use lasagna sheets in place of cannelloni pasta as well. As working with cannelloni pasta can be tricky.

Mint Alfalfa sprouts Cherry tomato and Roasted Chicken Salad



A healthy snack can be a salad as well. This mint, alfalfa sprouts and roasted chicken salad fits in to this category perfectly. If you have some-left over chicken you can use up in this salad as well. Alfalfa sprouts are considered rich in minerals and have multiple health benefits. Mint leaves gives a nice aromatic flavour to this salad. This salad can be paired up with Mexican Burritos as sides or you can make them as main dish as well, just increase roasted chicken pieces to add lean proteins in to this salad.




Here is how you can assemble the salad

Mint Alfalfa sprouts Cherry tomato and Roasted Chicken salad
Serves- 2-3
Recipe requirements
  • 5-6 mint twigs
  • About half cup of alfalfa sprouts
  • About quarter cup of garlic sprouts
  • 1 cup of cherry tomato or 12-15 cherry tomatoes cut into half
  • 1 cup of roasted chicken small bite-size pieces

Method
  • Take out fresh leaves from mint twigs. Clean mint leaves, alfalfa and garlic sprouts well in water.
  • Chop mint leaves finely. Chop roasted chicken in to bite size pieces (I have used chicken breast portions from  this  roasted chicken recipe).
  • In a big mixing bowl, add in mint leaves, alfalfa and garlic sprouts.
  • Add in cherry tomatoes cut in to half to the above.
  • Add in roasted chicken and mix well all.
  • Adjust seasoning with salt.
  • Add in 1 tsp of olive oil and toss well.
  • Serve and enjoy with some burritos or quesadillas as sides.
